Baked Eggplant

The actual Wyatt's Cafeteria Baked Eggplant "recipe". Recipe submitted by Peggy O.

 

What you will need:

  • 1 lb eggplant, peeled

  • 1/2 lb dry bread - cubed

  • 1/2 Cup evaporated milk

  • 1/4 Cup whole milk

  • 1/4 Cup butter- melted

  • 1/4 Cup onions - finely chopped

  • 1/4 green peppers -finely chopped

  • 1/4 Cup celery-finely chopped

  • 2 eggs-slightly beaten

  • 1 TBS pimiento-chopped

  • 2 tsp salt

  • 1/2 tsp pepper

  • 1/4 tsp sage

  • 1 1/2 Cup cheddar cheese-grated

 

Cut peeled eggplant into cubes and soak in salt water in refrigerator overnight (min 6 hours).

 

Drain soaked eggplant and place in pan. Cover with water and simmer until tender.

 

Soak bread cubes in milk. Saute onions, peppers, celery in butter for about 15 minutes or until tender. Combine eggplant, bread, veggies. Add eggs, seasonings and pimiento, blend thoroughly.

 

Place in greased baking dish and bake for 45 minutes at 350 degrees Fahrenheit. Top with grated cheese and return to oven until cheese melts.

 

Yield: 6 servings. Enjoy everyone!
