Can you use mylar bags and oxygen absorbers in the buckets?

Yes you CAN....but you don't HAVE TO.  It depends upon how long you intend to ignore the food and where you intend to  keep it.

For food we intend to use up within the year, since these are BPA-FREE and have an airtight seal, we simply store items directly in a washed/dried pail. Sometimes tossing in a couple of 1000cc oxygen absorbers and sometimes not.  We have stored Organic Cane Sugar directly in this size for up to a year with NO clumping, so we know how air-tight it is.

For food we store that either 1) we may not get to in a year or 2) has to be kept in a less than optimum place (always keep food dark, dry and cool - under 80 degrees Fahrenheit ) then a mylar bag with an oxygen absorber is good insurance. We call this 'Store & Ignore' food storage.
